| Well, as far as I know, you can't just wake up with blue eyes when they were brown yesterday, or something -_-
Your genes don't just change. You're born with a certain eye color, whether it's mixed or just a single color. It doesn't litterally change colors, because that would mean your genes would have to change. You're born with a certain hair color and certain eye color(s, if you're eyes are mixed. An example being; You have brown eyes with blue specks, or something.)

| I've watched my eyes change color in the mirror. Took five minutes, and BTW eye eye color is dependent on many factors not just genes.
I can take pics of only my eyes to prove it.

| eye color changing depends on the light. Your Iris cannot literally change color, but depending on the lighting it can appear blue when your eyes are really green. For example my eyes are green but appear brown in some pictures.
